TOKYO -- Japanese diners' love affair with eel depends on China, which supplies 60% of the country's unagi.

Yang Sei Seafoods, headquartered in the Guangdong city of Foshan, about 125 km northwest of Hong Kong, has spent years studying Japan's cravings for the bony, snakelike fish with a smooth, slimy skin. It supplies eel to restaurants and retailers in Japan, including the Yoshinoya chain of gyudon beef-and-rice eateries, kaiten-zushi conveyor belt sushi bars and convenience stores.
