Sushi school creates chefs in 3 months using hybrid teaching

Course with online videos, hands-on training aimed at addressing shortage of pros

OSAKA -- A school for aspiring sushi chefs, which opened on May 8, features online lessons and on-the-job training at real sushi restaurants with the goal of turning out skilled sushi chefs in just three months.

Japan Sushi Leading Academy, set up by sushi restaurant chain Fujinaga in Tokyo, has an online-based video program that shows, for example, the difference between an amateur and a seasoned pro forming rice.
