TOKYO -- Seafood wholesalers and food service companies in Japan are using cutting-edge freezing and defrosting technology to give sushi lovers the taste of freshly made sushi anywhere.

These companies hope to win over customers buying gifts, and from food service providers serving nursing homes and company cafeterias. Fishery workers and wholesalers see in frozen sushi an opportunity to expand seafood consumption and raise their incomes.
