Itochu data helps Yamazaki turn imperfect bananas into cakes

TOKYO -- When Itochu Food Sales and Marketing -- a unit of the big Japanese trading house -- provided the Yamazaki Baking Group with a banana paste and suggested that the ingredient be used in baked goods, it was acting on an analysis of accumulated data.

It was also sure it was helping Yamazaki latch onto a current consumer trend.
