TOKYO -- In Japan's sake industry, there are growing moves to create new products and stimulate demand by blending multiple brands to add depth to taste and flavor.

One startup has launched a high-end sake that blends two of its own brands. Other products in Niigata and Shiga prefectures blend brands from rival breweries.
