Japan's top sake exporter Dassai marries tech with tradition

Brewer harnesses data in pursuit of quality and consistency

YAMAGUCHI, Japan -- Known for the popular Dassai brand, Asahi Shuzo, Japan's largest sake exporter, is combining big data with the artisanal brewing process to supply fans at home and abroad with a reliable, quality product.

The company's main brewery is located in the mountains of Iwakuni, Yamaguchi prefecture, in southwestern Japan. Every morning at 9:30, CEO Kazuhiro Sakurai, his father and chairman, Hiroshi Sakurai, and other key figures gather in an in-house lab to test if the sake pressed the day before is good enough to ship.
