TOKYO -- Prices of scallops from Japan are rebounding from a slump induced by a nearly year-old Chinese ban, buoyed by efforts to boost consumption at home as well as surging exports to such markets as North America and Southeast Asia.
Demand is high for tamarei -- fresh scallops that are flash-frozen, making them safe for raw consumption -- at Tokyo's Toyosu Market. The shellfish are used in sushi, tempura, Chinese cuisine and other foods.
