KANAZAWA, Japan -- The global boom in Japanese food has extended even to ice, as a Kanazawa company making highly pure ice boosted U.S. sales sevenfold in three years thanks to a reputation built through upscale bars and now looks to expand to other countries.
Pure ice is made by removing the minerals and impurities as water freezes, with Kuramoto Ice taking 72 hours in a process that helps improve purity.
