MEDAN, Indonesia -- If you speak to almost anyone in the city of Medan, in Indonesia's North Sumatra province, they will tell you the same thing: The food is excellent.

Medan is known as a culinary hub across Indonesia, an archipelago of some 17,000 islands, and both domestic and international tourists flock to the city to sample its sweet and savory delights. But what makes Medan's cuisine so delicious?
